Slow poached salmon with fennel and grapefruit, mustard crusted pork tenderloin with cabbage, mashed sweet potato with leeks, steamed broccoli with garlic, granny smith apple salad with celery and golden raisins.

Salad Bar Organic

Mixed lettuces, sliced cucumbers, tomatoes, mushrooms, goat cheese, chopped eggs, toasted walnuts, dried cranberries, poached pears, with house dressings.

Snack Afternoon

Salty popcorn with parmesan and olive oil, Sweet lemon bars, Chocolate malt balls, Healthy chia yogurt pudding with cranberries, and assorted Summit signature cookies.
